21 Day Fix approved Apple crisp

I love my eggs, oats, and veggies for breakfast. But sometimes I need to switch things up and have something new. I especially like the thought of having something for breakfast that seems sassy but totally follows my meal plan!!  Woohooo!!


 APPLE CRISP PARFAIT


21 Day fix approved Apple crisp Parfait
Makes 4 servings

Ingredients:

4 apples ---- peeled, cored and diced
1 cup old fashioned oats
2 tbsp honey
1 tbsp coconut oil
1 tsp vanilla
1 tsp cinnamon (divided)
1/2 tsp nutmeg
4 individual tubs of plain, greek yogurt OR use red fix container to measure yogurt out.

 Directions:

Spray a 8 x 8 casserole pan with non-stick spray and preheat the oven to 350 degrees.
Toss the apples with 1/2 of cinnamon. 

Spread them into the prepared pan.
Mix the oats, coconut oil, honey, vanilla, 1/2 tsp of cinnamon and nutmeg together.
Sprinkle the oats over the apples.
Bake for 30-35 minutes


Mix each container of plain yogurt with a splash of vanilla. Add apple mixture on top of the yogurt. Drizzle with a little bit more honey if you want. 



Note: I prepped this to have during the week for my breakfast. 
So each day I would reheat the apples and put on top of the yogurt. 
  
Here you can see how i divided it into 4 servings!


My favorite plain greek yogurt is OIKOS. I divided the yogurt into 4 different prep containers and when ready to eat I will measure the yogurt in my red fix container.




21 Day Fix Container Count:
1 purple (apple)

1 yellow (oatmeal)
1 red (yogurt). 
You can also count 1 tsp for the coconut oil.

Note: You can have about 2 tsp of honey per day. That equals out to about what is sweetening up the oatmeal mixture give or take. Im not going to stress if its EXACT!! :)

Left: A week post partum after baby #2. 200+ pounds.
Right: 8 months post partum. 165 pounds!

There were days where I was insanely tired and SOOOOO unmotivated i almost convinced myself to settle.
🔯Meal prepping takes too much time.
🔯 Working out with two kids is too hard.
🔯 Being up several times with a baby is a good enough excuse to skip my workouts.
🔯 IM TOO TIRED
🔯 Healthy food is "expensive".
🔯 I'll change my bad habits but I'm "not ready" to right now.
EXCUSES EXCUSES EXCUSES!

I had a million excuses at my finger tips. And some days I used one of them. Lol! But if I took a step back, I dusted myself off and kept GOING! Looking back on the past 8 months, I'm so glad I didn't let excuses get the best of me. I had excuses until I was 27 years old why I couldn't change.
ACTION >EXCUSES!
I like action better.

3 Ingredient Peanut Butter Cookies

3 ingredient Peanut Butter Cookies
 Ingredients:
1/2 c peanut butter
1 egg
1/4 c honey


Instructions:
Preheat oven to 350 and put parchment paper over a baking sheet.
Whisk egg in small bowl. 

Add peanut butter and honey
Mix well.
Using a tablespoon, drop cookies on baking sheet. The batter will be gooey.
Bake for 15 minutes on middle oven rack.
Remove from oven and allow to cool on baking sheet for 5 minutes. 

Cookies will continue baking and firm as they cool.

Same Shirt

Same shirt • A few months apart • About a 23 pound difference. 
 
 

I remember after I had my second csection in February, I thought I would spend all summer miserable about my weight. Little did I know just how DETERMINED & STRONG I actually was. I hit my pre pregnancy weight before I knew it and THEN hit the lowest weight of my ENTIRE life and got into the 160's.

I owe this ALL to following the fix meal plan. If it wasn't for portion control + knowing exactly what to eat...I wouldn't be where I am now. I've realized recently (which I've always KNOWN but it became so much more real lately) just how important nutrition is. THAT is where your results come in. And most importantly how you eat is a big factor in how you FEEL. and I just can't believe I ate like crap until I was 27 years old.

Sometimes when you get discouraged you need to take a step back and realize how far you've come. Even if its two pounds. CELEBRATE those two pounds. This journey isn't easy but Dont be like everyone else and give up. We gotta keep going.

Back On Track!

It is time to get BACK ON TRACK!!!

I was being so awesome with my nutrition and BAM!! We went on a mini getaway out of town, stayed in a hotel, and nutrition was not good. I was determined to get right back on track but it was HARD!! Ive been doing great with workouts everyday, but we all know nutrition is KEY! The more sugar we have, the more we CRAVE it so I know this next week is going to be hard. But I'm DETERMINED. I have not been feeling my best and its time to get my ENERGY back!

First things first, I just completed a round of the 21 day fix extreme. (If you want to call it a round because my nutrition was horrible the last half. lol) So its TIME to start a new workout program and I am ready to PUSH myself. 

Since I had Grace in February I have completed the 21 day fix (lost 11.8 pounds) 22 minute hard corps (lost 12+ pounds) and the 21 day fix extreme (eh, maintained). I was thinking what i should do next???

One criteria for my workouts is they have to be a half hour or less. I have a 3 year old and a 6 month old so i dont have time to go to the gym or do an hour long workout in my living room. I need something that is a 1/2 hour, but a great calorie burn at the same time. 

I decided to go with.........


INSANITY MAX 30!


6 days a week. 
30 minutes a day in the comfort of my own living room. 
8 weeks long!!

I'll admit, I'm slightly scared but so ready! 

I have set up a few mini goals for myself this week to get me back on track. 

-Drink one gallon of water a day

-Follow the 21 day fix meal plan as I have since May. 

-Use my portioned containers so i KNOW I'm eating the right amount.  

-NO SUGAR except those found naturally in fruit. 

-Max 30 workouts everyday and PUSH myself through them.  

These things above are all so easy to follow but also so easy not to follow, right???? 



I also went grocery shopping for ALL fix approved food, did some meal prep today, and made out a MEAL PLAN that i plan to follow this week!!

Ill post the meal plan below for those who may want new ideas!  

If im hungry in the morning, I like to eat one of my yellow containers (carbs) before my workout. (Otherwise Ill just have it with my Shakeology) 

You may also notice that I have two snacks back to back before dinner. There's a reason. lol! I like to finish all of my yellow and purple containers before dinner. (carbs and fruits) So right before dinner, around 3-4pm, I will eat my last carb and fruit of the day. My favorite snack is mashed sweet potatoes, 1/2 banana, and 1tsp peanut butter. It is like a DESERT! Then i usually have dinner or protein and veggies around 6. 

I am ready to ROCK this week!! I know its going to be hard detoxing from sugar and getting back on track but 100 percent worth it. Wherever you are at with your journey, I challenge you to start FRESH tomorrow, make a plan, and STICK to it.

You Choose!






Which life do you want more??


An unhealthy life.
A life where you delete every picture taken of you.
Where you want to cry in the dressing room.
When you take a group photo and you make sure you're hiding in the back.
Not fitting in a ride at the carnival. (That happened to me) When you gradually go up pants sizes and have no idea how to stop this.

Do you want to live a happy healthy life?
Where dressing rooms Dont make you cry anymore but actually put you in SHOCK at how far you've come.
Taking a picture with confidence not even thinking twice about deleting it.
You're not just alive you're LIVING!

We all know what its like to hate ourselves. But how many truly know how to love themselves?? I'm a completely different person. Inside and out! All I did was NOT quit.

Through all the pain & tears & obstacles & plateaus I KEPT FIGHTING.
If nothing changes then nothing changes!
