Back On Track!

It is time to get BACK ON TRACK!!!

I was being so awesome with my nutrition and BAM!! We went on a mini getaway out of town, stayed in a hotel, and nutrition was not good. I was determined to get right back on track but it was HARD!! Ive been doing great with workouts everyday, but we all know nutrition is KEY! The more sugar we have, the more we CRAVE it so I know this next week is going to be hard. But I'm DETERMINED. I have not been feeling my best and its time to get my ENERGY back!

First things first, I just completed a round of the 21 day fix extreme. (If you want to call it a round because my nutrition was horrible the last half. lol) So its TIME to start a new workout program and I am ready to PUSH myself. 

Since I had Grace in February I have completed the 21 day fix (lost 11.8 pounds) 22 minute hard corps (lost 12+ pounds) and the 21 day fix extreme (eh, maintained). I was thinking what i should do next???

One criteria for my workouts is they have to be a half hour or less. I have a 3 year old and a 6 month old so i dont have time to go to the gym or do an hour long workout in my living room. I need something that is a 1/2 hour, but a great calorie burn at the same time. 

I decided to go with.........


INSANITY MAX 30!


6 days a week. 
30 minutes a day in the comfort of my own living room. 
8 weeks long!!

I'll admit, I'm slightly scared but so ready! 

I have set up a few mini goals for myself this week to get me back on track. 

-Drink one gallon of water a day

-Follow the 21 day fix meal plan as I have since May. 

-Use my portioned containers so i KNOW I'm eating the right amount.  

-NO SUGAR except those found naturally in fruit. 

-Max 30 workouts everyday and PUSH myself through them.  

These things above are all so easy to follow but also so easy not to follow, right???? 



I also went grocery shopping for ALL fix approved food, did some meal prep today, and made out a MEAL PLAN that i plan to follow this week!!

Ill post the meal plan below for those who may want new ideas!  

If im hungry in the morning, I like to eat one of my yellow containers (carbs) before my workout. (Otherwise Ill just have it with my Shakeology) 

You may also notice that I have two snacks back to back before dinner. There's a reason. lol! I like to finish all of my yellow and purple containers before dinner. (carbs and fruits) So right before dinner, around 3-4pm, I will eat my last carb and fruit of the day. My favorite snack is mashed sweet potatoes, 1/2 banana, and 1tsp peanut butter. It is like a DESERT! Then i usually have dinner or protein and veggies around 6. 

I am ready to ROCK this week!! I know its going to be hard detoxing from sugar and getting back on track but 100 percent worth it. Wherever you are at with your journey, I challenge you to start FRESH tomorrow, make a plan, and STICK to it.

You Choose!






Which life do you want more??


An unhealthy life.
A life where you delete every picture taken of you.
Where you want to cry in the dressing room.
When you take a group photo and you make sure you're hiding in the back.
Not fitting in a ride at the carnival. (That happened to me) When you gradually go up pants sizes and have no idea how to stop this.

-OR-

Do you want to live a happy healthy life?
Where dressing rooms Dont make you cry anymore but actually put you in SHOCK at how far you've come.
Taking a picture with confidence not even thinking twice about deleting it.
You're not just alive you're LIVING!

We all know what its like to hate ourselves. But how many truly know how to love themselves?? I'm a completely different person. Inside and out! All I did was NOT quit.

Through all the pain & tears & obstacles & plateaus I KEPT FIGHTING.
If nothing changes then nothing changes!

21 Day fix Approved Mac and Cheese!

It has been a LONG time since I have had Mac and cheese! I wanted to try a recipe that was fix approved, because 99% of the time that is the eating plan I follow. Dont know what the 21 day fix is??? CLICK HERE  I search around for some recipes and came up with my own. lol!!! Im going to tweak it just a little bit next time, but overall it was a success. 


FIX APPROVED MACARONI AND CHEESE


Ingredients

*Blue fix container of shredded cheddar cheese
*Yellow container of whole grain penne, cooked (before draining, reserve a mug of the cooking water)
*1/2 Red container of plain Greek yogurt
* A dash of garlic powder, himalyan salt, and pepper.

Instructions 
-Cook Pasta until done
-Drain, and pour into a large mixing bowl.  Add a splash of the reserved cooking water.
-Add cheese and stir until fully melted
-Add Greek yogurt and all of the spices.
-Stir until everything is mixed. Add more cooking water to thin if necessary.
Thats it!! A perfect side to any dinner. Gwen loved it too!!!

3 Ingredient No-Bake Peanut Butter Bars

This was the perfect snack to make on a rainy day. Super easy and No oven needed!

Ingredients:
1 Cup-Natural Peanut Butter
1 Cup-Honey (i used about 3/4 of a cup)
3 cups-Old fashiond oats


Instructions:

Put peanut butter and honey in a heavy saucepan and heat on low until thoroughly combined and becomes a liquid consistency.
Mix in oats and stir.
Press into a 9x9 pan. 
Cover and let set overnight.  




VIOLA!! Thats it!! My hubby ate half the pan the next day when it was ready to be eaten. lol!! He did say it was a little bit dry, but nothing that a glass of milk cant fix. ;) I might try to tweak the recipe next time so its a little more moist.

Homemade Dijon Vinaigrette Dressing

I'm not going to lie, I am a RANCH dressing girl! But along my journey it is something I have given up. Don't get me wrong, if i go to a party or event and its there, i might use a dab. :P But I never buy it for my house. There is healthier alternatives to ranch, but its never the same. My salads used to consist of ranch, cheese, & croutons.....lol!! Not even sure if I had any veggies besides lettuce. I didn't change all my habits overnight, but slowly started making healthier decisions. Ranch dressing, coffee creamer, and soda/sugary energy drinks-just to name a few-are the things I've given up along my journey. 




Anyway, I was SO happy that when I made the 21 day fix approved dressing, I LOVED IT!!! There is several options for dressings in the eating plan, but the only one I've ever tried has been the Dijon Vinaigrette. I actually crave salads now just so I can use the dressing. haha! I use the orange container to measure out my dressing and it is PLENTY!!





So, I'm sure you are wondering what the recipe is! Here it is::::

-3 Tbsp Red Wine Vinegar
-3Tbsp Fresh lemon juice
-3 Tbsp Dijon Mustard
-2 cloves garlic, chopped
-1/4 tsp sea salt

-1/4 tsp black pepper
-6 tbsp extra-virgin olive oil

Directions:

1. Combine vinegar, lemon juice, mustard, garlic, salt, and pepper in a medium bowl;whisk to blend.

2. Slowly add oil while whisking; mix well. 

------>Store leftover dressing in a covered container in the refrigerator.
*Makes 6 servings





How easy is that?? All homemade ingredients. You know EXACTLY what you are putting into your body. And the fact that is tastes DELICIOUS is an added bonus. Who's going to try this??
